Ingredients
- 1 tsp mustard oil
- 500g boneless chicken thighs, cubed
- Salt to taste
- 1/4 tsp turmeric powder
- 1/2 tsp black pepper powder
- 1 onion, thinly sliced
- Garlic, thinly sliced or finely minced
- 3-4 green chillies, sliced
- 1 tsp chilli flakes
- 1 chicken stock cube (optional)
- 1/2 cup water
- 3 cheese slices
- A pinch of sugar
- Spring onion, chopped (optional)
Method
- 1Heat mustard oil in a pan.
- 2Add cubed boneless chicken, salt, turmeric powder, and black pepper powder to the hot oil, then cook on high heat for 2-3 minutes until opaque whitish-brown.
- 3Add thinly sliced onions, garlic, green chillies, and red chilli flakes to the pan.
- 4Add the optional chicken stock cube and water, then stir, bring to a boil, and allow to simmer.
- 5Once simmering, place 2-3 cheese slices directly into the liquid.
- 6Stir the melting cheese into the chicken mixture until it fully incorporates and thickens the gravy to be creamy and glossy.
- 7Sprinkle a pinch of sugar into the dish and stir to balance the flavors.
- 8Garnish with chopped spring onions if desired.
- 9Serve hot.
