Ingredients
  • ½ large raw mango (about 100 g flesh)
  • 2 small tomatoes
  • 8-10 cloves peeled garlic
  • 5-6 whole green chilies
  • ½ tsp mustard oil
  • ¼ tsp salt (or to taste)
  • ¼ small red onion, finely diced
  • 1 tbsp fresh coriander leaves, chopped
  • 100 g low-fat paneer
  • 2-4 tbsp hot water (to adjust thickness)
  • ½–1 tsp sugar (optional, to balance the sourness)
Method
  1. 1Heat a tawa and lightly brush it with mustard oil.
  2. 2Place the halved raw green mango (skin on, cut side down), halved tomatoes, garlic cloves, and whole green chilies on the hot tawa.
  3. 3Sprinkle salt over the ingredients on the tawa.
  4. 4Roast on medium heat, turning occasionally, until all ingredients are charred, smoky, and softened.
  5. 5Carefully scoop the pulp from the charred raw mango skin.
  6. 6Transfer the roasted mango pulp, charred tomatoes, garlic, and green chilies into a blender jar.
  7. 7Add the low-fat paneer cubes, diced red onion, chopped coriander leaves, hot water, additional salt, and sugar to the blender jar.
  8. 8Blend the mixture until it is smooth, thick, and creamy.
  9. 9Garnish the finished chutney with extra diced red onion and chopped coriander leaves.
  10. 10Serve the chutney with paratha or as a spread or salad dressing.
