Ingredients
  • 500 g boneless chicken thigh, cubed
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • ½ tsp black pepper (for marinating)
  • 1 tbsp lemon juice (for marinating)
  • 1 cup thick curd
  • 1 tsp red chilli powder
  • ½ tsp chilli flakes
  • ¼ tsp turmeric powder
  • 1½ tsp coriander powder
  • ½ tsp black pepper powder (for curd masala)
  • ¾ tsp garam masala
  • 2 tbsp oil
  • ½ tbsp lite butter
  • 1-2 tbsp ginger juliennes (for cooking)
  • 1 tbsp garlic juliennes
  • 6-8 fresh green chillies, thinly sliced (for cooking)
  • A pinch of sugar
  • 1 tsp lemon juice (for finishing)
  • 1 tsp chaat masala
  • Chopped fresh coriander leaves
  • 2-3 extra green chillies, sliced (for garnish)
  • 1 tbsp extra ginger juliennes (for garnish)
Method
  1. 1Marinate chicken with 1 tbsp ginger-garlic paste, salt to taste, ½ tsp black pepper, and 1 tbsp lemon juice for 10 minutes.
  2. 2Whisk 1 cup thick curd with 1 tsp red chilli powder, ½ tsp chilli flakes, ¼ tsp turmeric powder, 1½ tsp coriander powder, ½ tsp black pepper powder, ¾ tsp garam masala, and salt to taste until smooth.
  3. 3Heat 2 tbsp oil and ½ tbsp lite butter in a pan, then add 1-2 tbsp ginger juliennes and 1 tbsp garlic juliennes and sauté briefly until fragrant.
  4. 4Add the marinated chicken and 6-8 thinly sliced fresh green chillies to the pan and cook on medium-high heat for 3-4 minutes until the chicken begins to cook and change color.
  5. 5Lower the flame and mix in the whisked curd mixture with the chicken.
  6. 6Cover the pan with a lid and allow the chicken to cook through and flavors to meld until oil separates and bubbles to the surface.
  7. 7Remove the lid and cook the gravy further, stirring occasionally, until it thickens to the desired consistency.
  8. 8Taste the gravy and balance flavors with a pinch of sugar and additional salt if needed.
  9. 9Gently crush some chicken pieces with a spatula to integrate them more with the gravy.
  10. 10Garnish the dish with chopped fresh coriander leaves, 2-3 extra sliced green chillies, 1 tbsp extra ginger juliennes, then add 1 tsp fresh lemon juice and 1 tsp chaat masala.
