Ingredients
  • 1 cup chickpeas
  • 1 cup basmati rice
  • 1/4 cup refined oil
  • 1 bay leaf
  • 5-6 green cardamoms
  • 1-2 black cardamoms
  • 1 teaspoon cumin seeds
  • 1 cup sliced red onions
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 1/4 teaspoon salt
  • 1 teaspoon chana masala
  • 1 1/4 cup water (for chickpeas)
  • 1 cup cubed potatoes
  • 1 tablespoon ghee
  • 1 1/4 cup water (for rice and potatoes)
  • Fresh chopped cilantro for garnish
Method
  1. 1Heat 1/4 cup of refined oil in an Instant Pot or electric pressure cooker.
  2. 2Add a bay leaf, 5-6 green cardamoms, 1-2 black cardamoms, and 1 teaspoon of cumin seeds, then temper them in the hot oil until fragrant.
  3. 3Add 1 cup of thinly sliced red onions and sauté, stirring with a wooden spatula, until they turn golden brown.
  4. 4Add 1 tablespoon of ginger-garlic paste, 2 green chilies, 1 teaspoon red chili powder, 1 teaspoon turmeric powder, 1 1/4 teaspoon salt, and 1 teaspoon chana masala.
  5. 5Stir the mixture thoroughly until well combined and aromatic.
  6. 6Add the pre-soaked and drained chickpeas and mix with the spice base.
  7. 7Pour 1 1/4 cup of water into the pot, then seal the pressure cooker and set to cook for 20 minutes.
  8. 8After 20 minutes, release the pressure, and open the lid.
  9. 9Add 1 cup of diced potatoes and the pre-soaked and drained basmati rice to the pot.
  10. 10Spoon 1 tablespoon of ghee over the rice and add another 1 1/4 cup of water.
  11. 11Gently stir the ingredients to combine without breaking the rice grains.
  12. 12Seal the pressure cooker once more and set to cook for 3 minutes.
  13. 13After the second pressure cooking cycle, release the pressure and open the lid.
  14. 14Gently fluff the pulao within the pot using a wooden spatula.
  15. 15Serve the final dish garnished with freshly chopped green cilantro.
