Ingredients
  • Cauliflower florets (approx. 1 medium head)

  • 1 tsp ajwain
  • 1 tsp fennel seeds
  • 1 tsp coriander powder
  • 1 tsp amchur
  • 1 tsp red chili powder
  • Salt (added just before making parathas)
  • Whole wheat flour (quantity not specified, enough to make several parathas)
  • Water (for kneading)
  • Tofu
  • Oil or ghee (for cooking the parathas)
  • Dahi (yogurt)
  • Hummus

Method
  1. 1Add washed cauliflower florets, broccoli florets, a bunch of fresh cilantro, and green chilies into a food processor.
  2. 2Process the vegetables until finely minced and crumbly with a light green texture.
  3. 3Transfer the minced vegetable mixture to a large plate or bowl.
  4. 4Add ajwain, fennel seeds, coriander powder, amchur, and red chili powder to the vegetable mixture.
  5. 5Mix all the dry spices thoroughly into the vegetable mixture using a spoon.
  6. 6Add salt to the mixture right before making parathas and mix well.
  7. 7Take a medium-sized portion of soft dough, flatten it into a small disc, and create a well in the center.
  8. 8Carefully scoop a generous amount of the prepared green vegetable filling into the well.
  9. 9Gently bring the edges of the dough together over the filling, sealing it completely to form a stuffed ball, then press down lightly.
  10. 10Dip the stuffed dough ball in dry flour and gently roll it out into an even, flat, round paratha.
  11. 11Heat a tawa on a stovetop and carefully place the rolled paratha onto it.
  12. 12Flip the paratha after about a minute, or when small bubbles appear and the underside shows light brown spots.
  13. 13Drizzle approximately one teaspoon of oil or ghee over the partially cooked side.
  14. 14Flip the paratha again, apply oil or ghee to the other side, and press gently with a spatula until both sides are golden brown, lightly crisp, and fully cooked.
