Ingredients
  • 1 lb boneless chicken breast, cooked and sliced
  • 1/2 cup whole cashews
  • 1 medium white onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 large red bell pepper, cut into strips
  • 1 bunch Chinese broccoli (kai-lan), chopped
  • 2 tbsp cooking oil
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 tsp cornstarch
  • 1/4 cup water or chicken broth
Method
  1. 1Heat cooking oil in a large wok over high heat.
  2. 2Add sliced onions and minced garlic to the hot wok and stir-fry until fragrant.
  3. 3Introduce red bell pepper strips and continue to stir-fry.
  4. 4Add chopped Chinese broccoli (kai-lan) and toss continuously.
  5. 5Add pre-cooked chicken strips to the wok.
  6. 6Pour the stir-fry sauce (soy sauce, oyster sauce, sugar, cornstarch, water) over all ingredients.
  7. 7Stir vigorously to ensure all ingredients are evenly coated with the sauce.
  8. 8Finally, add the whole cashews and stir them thoroughly until combined with the chicken and vegetables.
