Ingredients
- 1 lb boneless chicken breast, cooked and sliced
- 1/2 cup whole cashews
- 1 medium white onion, thinly sliced
- 3 cloves garlic, minced
- 1 large red bell pepper, cut into strips
- 1 bunch Chinese broccoli (kai-lan), chopped
- 2 tbsp cooking oil
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sugar
- 1 tsp cornstarch
- 1/4 cup water or chicken broth
Method
- 1Heat cooking oil in a large wok over high heat.
- 2Add sliced onions and minced garlic to the hot wok and stir-fry until fragrant.
- 3Introduce red bell pepper strips and continue to stir-fry.
- 4Add chopped Chinese broccoli (kai-lan) and toss continuously.
- 5Add pre-cooked chicken strips to the wok.
- 6Pour the stir-fry sauce (soy sauce, oyster sauce, sugar, cornstarch, water) over all ingredients.
- 7Stir vigorously to ensure all ingredients are evenly coated with the sauce.
- 8Finally, add the whole cashews and stir them thoroughly until combined with the chicken and vegetables.
