- 2-3 medium-sized red carrots, grated
- 1/4 to 1/2 cup chopped dates

- 1Grate the red carrots.
- 2Transfer the grated carrots into a blender jar.
- 3Add chopped dates, whole almonds, and milk to the blender.
- 4Blend the mixture until it forms a smooth, thick liquid.
- 5Place a deep pan or kadai on an induction cooktop.
- 6Pour the blended carrot-almond-date milk mixture into the heated pan.
- 7Add ghee and cardamom powder to the simmering mixture.
- 8Continuously stir the mixture with a large spoon as it heats and thickens.
- 9Bring the liquid to a boil and allow it to simmer, reducing slightly and developing a richer color and consistency.
- 10Serve the Gajar Halwa Doodh hot.
- 11Pour the hot drink into traditional small terracotta clay cups or clear glass mugs.
- 12Garnish each serving generously with chopped pistachios and delicate saffron strands.
