  • 2-3 medium-sized red carrots, grated
  • 1/4 to 1/2 cup chopped dates

Method
  1. 1Grate the red carrots.
  2. 2Transfer the grated carrots into a blender jar.
  3. 3Add chopped dates, whole almonds, and milk to the blender.
  4. 4Blend the mixture until it forms a smooth, thick liquid.
  5. 5Place a deep pan or kadai on an induction cooktop.
  6. 6Pour the blended carrot-almond-date milk mixture into the heated pan.
  7. 7Add ghee and cardamom powder to the simmering mixture.
  8. 8Continuously stir the mixture with a large spoon as it heats and thickens.
  9. 9Bring the liquid to a boil and allow it to simmer, reducing slightly and developing a richer color and consistency.
  10. 10Serve the Gajar Halwa Doodh hot.
  11. 11Pour the hot drink into traditional small terracotta clay cups or clear glass mugs.
  12. 12Garnish each serving generously with chopped pistachios and delicate saffron strands.
