  • 1 kg carrots
  • 1 litre milk
  • 150 g brown sugar
  • 60 g almonds
  • 2 tbsp ghee
  • Finely chopped pistachios (optional, for topping)
Method
  1. 1Wash, peel, and grate the red carrots using the larger holes of a box grater.
  2. 2In a heavy pan, add the milk and grated carrots.
  3. 3Cook on medium heat, stirring often, until the milk reduces, thickens, and is almost absorbed into the carrots.
  4. 4Once the milk is almost absorbed and the carrots are soft, add the brown sugar and mix well.
  5. 5Continue to cook, stirring vigorously, until the liquid completely evaporates, the mixture becomes thick, cohesive, and starts to pull away from the sides of the pan.
  6. 6Add the 2 tbsp ghee and sliced almonds, then mix well.
  7. 7Cook for another 2–3 minutes.
  8. 8Turn off the heat and let it rest for a few minutes.
  9. 9Transfer the finished Gajar ka Halwa into a serving dish and garnish generously with additional sliced almonds and finely chopped pistachios.
