- 1 kg carrots
- 1 litre milk
- 150 g brown sugar
- 60 g almonds
- 2 tbsp ghee
- Finely chopped pistachios (optional, for topping)
Method
- 1Wash, peel, and grate the red carrots using the larger holes of a box grater.
- 2In a heavy pan, add the milk and grated carrots.
- 3Cook on medium heat, stirring often, until the milk reduces, thickens, and is almost absorbed into the carrots.
- 4Once the milk is almost absorbed and the carrots are soft, add the brown sugar and mix well.
- 5Continue to cook, stirring vigorously, until the liquid completely evaporates, the mixture becomes thick, cohesive, and starts to pull away from the sides of the pan.
- 6Add the 2 tbsp ghee and sliced almonds, then mix well.
- 7Cook for another 2–3 minutes.
- 8Turn off the heat and let it rest for a few minutes.
- 9Transfer the finished Gajar ka Halwa into a serving dish and garnish generously with additional sliced almonds and finely chopped pistachios.
