Method
- 1Peel and finely grate several medium-sized carrots.
- 2Blend pitted dates with milk into a smooth puree.
- 3Grind rolled oats into a fine flour.
- 4In a large mixing bowl, combine the date-milk puree, mashed banana, oil, and cinnamon powder, then mix thoroughly.
- 5Add the grated carrots to the wet mixture and mix well.
- 6Incorporate the oat flour, baking powder, and chopped walnuts into the batter.
- 7Combine all ingredients thoroughly with a spatula to form a thick, chunky batter.
- 8Preheat the oven.
- 9Prepare a round baking pan by lining it with parchment paper.
- 10Transfer the batter into the prepared pan and smooth the top.
- 11Place the pan into the preheated oven and bake until the cake is done.
- 12While the cake bakes, mix cream cheese, honey, and vanilla extract in a small bowl until smooth and creamy for the frosting.
