Method
  1. 1Peel and finely grate several medium-sized carrots.
  2. 2Blend pitted dates with milk into a smooth puree.
  3. 3Grind rolled oats into a fine flour.
  4. 4In a large mixing bowl, combine the date-milk puree, mashed banana, oil, and cinnamon powder, then mix thoroughly.
  5. 5Add the grated carrots to the wet mixture and mix well.
  6. 6Incorporate the oat flour, baking powder, and chopped walnuts into the batter.
  7. 7Combine all ingredients thoroughly with a spatula to form a thick, chunky batter.

  9. 9Prepare a round baking pan by lining it with parchment paper.
  10. 10Transfer the batter into the prepared pan and smooth the top.
  11. 11Place the pan into the preheated oven and bake until the cake is done.
  12. 12While the cake bakes, mix cream cheese, honey, and vanilla extract in a small bowl until smooth and creamy for the frosting.
