Ingredients
- Approximately 4-5 medium red onions (for dip)

Method
- 1Finely slice a large quantity of red onions.
- 2Add sliced red onions to a frying pan with melted butter and a pinch of salt.
- 3Cook the onions 'low and slow' over low heat, stirring occasionally, until beautifully golden brown, soft, and sweet caramelized.
- 4Transfer the majority of the caramelized onions to a blender jar.
- 5Add cream cheese, thick yogurt, whole garlic cloves, salt, black pepper, and honey to the blender jar with the onions.
- 6Blend the mixture until smooth and creamy.
- 7Thinly slice more red onions for garnish.
- 8Deep-fry the thinly sliced red onions in oil until crispy and golden brown.
- 9Drain the fried onions.
- 10Pipe the blended dip onto a long, dark green platter, forming decorative mounds.
- 11Generously garnish the dip with crispy fried onions and chopped spring onion greens.
- 12Arrange round, golden crackers around the dip for serving.
