Method
  1. 1Finely slice a large quantity of red onions.
  2. 2Add sliced red onions to a frying pan with melted butter and a pinch of salt.
  3. 3Cook the onions 'low and slow' over low heat, stirring occasionally, until beautifully golden brown, soft, and sweet caramelized.
  4. 4Transfer the majority of the caramelized onions to a blender jar.
  5. 5Add cream cheese, thick yogurt, whole garlic cloves, salt, black pepper, and honey to the blender jar with the onions.
  6. 6Blend the mixture until smooth and creamy.
  7. 7Thinly slice more red onions for garnish.
  8. 8Deep-fry the thinly sliced red onions in oil until crispy and golden brown.
  9. 9Drain the fried onions.
  10. 10Pipe the blended dip onto a long, dark green platter, forming decorative mounds.
  11. 11Generously garnish the dip with crispy fried onions and chopped spring onion greens.
  12. 12Arrange round, golden crackers around the dip for serving.
