  • A small bunch green onions/scallions

Method
  1. 1Finely dice one large red onion and finely chop a small bunch of green scallions.
  2. 2Place a stainless steel pan on a gas stove, add a small amount of cooking oil, then add the finely diced red onions and a sprinkle of salt.
  3. 3Sauté and stir the red onions until they are deeply caramelized and turn a rich reddish-brown color.
  4. 4In a white bowl, combine the softened cream cheese, caramelized onions, chopped green scallions, freshly ground black pepper, and an additional pinch of salt.
  5. 5Thoroughly mix all filling ingredients with a spatula and spoon until a uniform, creamy, and chunky filling is formed.
  6. 6Briefly dip a round rice paper sheet into a shallow plate of water to soften it, then transfer it to a wooden cutting board.
  7. 7Place a spoonful of the cream cheese and caramelized onion filling in the center of the softened rice paper.
  8. 8Gather the edges of the rice paper around the filling and gently press them together to form a small, translucent, pouch-like dumpling.
  9. 9Arrange the assembled dumplings on the perforated tray of a stainless steel steamer pot, place it over a gas stove, and cover with a lid.
  10. 10Steam the dumplings for one minute to heat through and set the rice paper without overcooking the cheese.
  11. 11Carefully transfer the steamed dumplings to a white serving plate with a gold rim.
  12. 12Drizzle a small amount of chili oil over each dumpling and garnish some with a few additional chopped green scallions.
  13. 13Serve hot, accompanied by a small bowl of chili oil for dipping.
