  • 3/4 white onion
  • 1 stick (113g) softened butter
  • 6 oz ground beef
  • 2 slices American cheese
  • 2 sesame seed hamburger buns
  • Small bunch fresh chives
  • 1 large dill pickle
  • 1 clove garlic
  • Few dashes hot sauce
  • Salt
  • 2 tbsp mayonnaise
Method
  1. 1Finely dice half a white onion and sauté until deeply caramelized.
  2. 2In a food processor, blend softened butter with caramelized onions and a pinch of salt; roll into a log and chill.
  3. 3Finely chop chives, finely dice dill pickle, and grate garlic.
  4. 4Combine mayonnaise, chopped chives, diced pickle, grated garlic, and hot sauce to make the burger sauce.
  5. 5Heat a cast iron griddle, place thinly sliced raw white onions on it.
  6. 6Place ground beef balls on the onions, season with salt, and smash flat.
  7. 7Once a deep brown crust forms, flip patties and top immediately with American cheese to melt.
  8. 8Slice a portion of the chilled compound butter.
  9. 9Assemble the burger with the bottom bun, burger patty with cheese and onions, compound butter slice, burger sauce, and top bun.
