Ingredients
- 1 egg
- 2-3 cloves peeled garlic
- 1 tablespoon red chili powder
- 2-3 green chilies, sliced
- A handful fresh curry leaves
- Salt to taste
- A little oil
- 1 bun
Method
- 1Crush the peeled garlic cloves with red chili powder in a mortar and pestle to make a coarse paste.
- 2Heat a pan and place a round metal egg ring in its center.
- 3Add a small amount of oil inside the egg ring.
- 4Crack an egg directly into the egg ring.
- 5Sprinkle salt, spoon the garlic-chili paste, and distribute sliced green chilies and fresh curry leaves over the egg.
- 6Cover the pan with a lid and cook the egg until done.
- 7Carefully remove the egg ring from around the cooked egg.
- 8Slice the bun in half.
- 9Transfer the cooked kagina egg from the pan and place it inside one half of the sliced bun.
- 10Place the other half of the bun on top to complete the sandwich.
- 11Serve hot and enjoy.
