Ingredients
  • 1 egg
  • 2-3 cloves peeled garlic
  • 1 tablespoon red chili powder
  • 2-3 green chilies, sliced
  • A handful fresh curry leaves
  • Salt to taste
  • A little oil
  • 1 bun
Method
  1. 1Crush the peeled garlic cloves with red chili powder in a mortar and pestle to make a coarse paste.
  2. 2Heat a pan and place a round metal egg ring in its center.
  3. 3Add a small amount of oil inside the egg ring.
  4. 4Crack an egg directly into the egg ring.
  5. 5Sprinkle salt, spoon the garlic-chili paste, and distribute sliced green chilies and fresh curry leaves over the egg.
  6. 6Cover the pan with a lid and cook the egg until done.
  7. 7Carefully remove the egg ring from around the cooked egg.
  8. 8Slice the bun in half.
  9. 9Transfer the cooked kagina egg from the pan and place it inside one half of the sliced bun.
  10. 10Place the other half of the bun on top to complete the sandwich.
  11. 11Serve hot and enjoy.
