  • 1 pound Brussels sprouts
  • 1 tablespoon coriander powder
  • 1.5 teaspoons cumin powder
  • 0.25 teaspoon turmeric powder
  • 0.5 teaspoon dried mango powder
  • 0.5 teaspoon red chili powder
  • 1.25 teaspoons Himalayan salt
  • 2 tablespoons ghee
  • 1 tablespoon butter
  • 0.125 teaspoon asafoetida
  • 2 tablespoons crushed peanuts
  • 2 tablespoons sesame seeds
  • 3 tablespoons hemp hearts (optional)
Method
  1. 1Trim ends and thinly slice Brussels sprouts.
  2. 2In a small bowl, combine coriander powder, cumin powder, turmeric powder, dried mango powder, red chili powder, and Himalayan salt; mix well.
  3. 3Sprinkle the spice blend over sliced Brussels sprouts and toss to coat evenly.
  4. 4Heat a wide flat non-stick pan on medium flame; add ghee and butter.
  5. 5Once melted, add asafoetida, crushed peanuts, and sesame seeds.
  6. 6Roast, stirring constantly, until peanuts are lightly browned and sesame seeds pop.
  7. 7Add the seasoned Brussels sprouts to the pan and stir well to coat.
  8. 8Cover and cook for 5 minutes on medium heat, stirring once during cooking.
  9. 9Uncover and cook further, stirring occasionally, until sprouts are tender, browned, and crispy.
  10. 10Turn off the stove.
  11. 11Optionally, sprinkle hemp hearts over the stir-fry and gently toss to combine.
