Ingredients
- 1 pound Brussels sprouts
- 1 tablespoon coriander powder
- 1.5 teaspoons cumin powder
- 0.25 teaspoon turmeric powder
- 0.5 teaspoon dried mango powder
- 0.5 teaspoon red chili powder
- 1.25 teaspoons Himalayan salt
- 2 tablespoons ghee
- 1 tablespoon butter
- 0.125 teaspoon asafoetida
- 2 tablespoons crushed peanuts
- 2 tablespoons sesame seeds
- 3 tablespoons hemp hearts (optional)
Method
- 1Trim ends and thinly slice Brussels sprouts.
- 2In a small bowl, combine coriander powder, cumin powder, turmeric powder, dried mango powder, red chili powder, and Himalayan salt; mix well.
- 3Sprinkle the spice blend over sliced Brussels sprouts and toss to coat evenly.
- 4Heat a wide flat non-stick pan on medium flame; add ghee and butter.
- 5Once melted, add asafoetida, crushed peanuts, and sesame seeds.
- 6Roast, stirring constantly, until peanuts are lightly browned and sesame seeds pop.
- 7Add the seasoned Brussels sprouts to the pan and stir well to coat.
- 8Cover and cook for 5 minutes on medium heat, stirring once during cooking.
- 9Uncover and cook further, stirring occasionally, until sprouts are tender, browned, and crispy.
- 10Turn off the stove.
- 11Optionally, sprinkle hemp hearts over the stir-fry and gently toss to combine.
