Ingredients
- Approximately 2 cups brown rice
- Water sufficient for soaking and blending
- 1-2 tbsp ground flaxseed
- Scrambled filling
- Chopped tomatoes
- Chopped cilantro
- Grated cheese
Method
- 1Transfer the soaked brown rice, along with some soaking water, into a blender jar.
- 2Add 1-2 tablespoons of ground flaxseed to the blender.
- 3Pour additional water into the blender to facilitate blending.
- 4Blend the mixture until it forms a smooth, thick batter.
- 5Heat a non-stick pan and scoop a ladleful of the prepared batter onto it.
- 6Use the back of the ladle to spread the batter into a thin, round shape.
- 7Cook the tortilla on the pan until it puffs up slightly and the first side is golden brown.
- 8Flip the tortilla with a spatula and cook the other side evenly until golden brown.
- 9(Optional) Fill the cooked tortillas with scrambled filling, chopped tomatoes, cilantro, and cheese to create breakfast tacos.
