Ingredients
  • Approximately 2 cups brown rice
  • Water sufficient for soaking and blending
  • 1-2 tbsp ground flaxseed
  • Scrambled filling
  • Chopped tomatoes
  • Chopped cilantro
  • Grated cheese
Method
  1. 1Transfer the soaked brown rice, along with some soaking water, into a blender jar.
  2. 2Add 1-2 tablespoons of ground flaxseed to the blender.
  3. 3Pour additional water into the blender to facilitate blending.
  4. 4Blend the mixture until it forms a smooth, thick batter.
  5. 5Heat a non-stick pan and scoop a ladleful of the prepared batter onto it.
  6. 6Use the back of the ladle to spread the batter into a thin, round shape.
  7. 7Cook the tortilla on the pan until it puffs up slightly and the first side is golden brown.
  8. 8Flip the tortilla with a spatula and cook the other side evenly until golden brown.
  9. 9(Optional) Fill the cooked tortillas with scrambled filling, chopped tomatoes, cilantro, and cheese to create breakfast tacos.
