Ingredients
- 300g straw mushrooms
- 1.5 tbsp sugar
- 1 tbsp minced shallots
- 1 tbsp minced garlic
- Several sprigs green peppercorns
- 1 tsp ground black pepper
- 1 tsp stock powder
- 2 tbsp soy sauce
- 90ml water
- 1 tbsp cooking oil
Method
- 1Clean and trim straw mushrooms.
- 2Marinate mushrooms with stock powder, soy sauce, and 1 tbsp sugar; mix thoroughly.
- 3Heat cooking oil in a non-stick pan. Add 0.5 tbsp sugar and caramelize until amber.
- 4Add 1 tbsp minced shallots and 1 tbsp minced garlic to the pan, and fry until golden and fragrant.
- 5Transfer the marinated mushrooms to a clay pot.
- 6Distribute several sprigs of whole green peppercorns among the mushrooms.
- 7Pour the hot caramelized shallot and garlic oil from the pan over the mushrooms in the clay pot.
- 8Sprinkle with 1 tsp ground black pepper and add 90ml water.
- 9Braise until mushrooms are tender and sauce thickens.
