Ingredients
  • 300g straw mushrooms
  • 1.5 tbsp sugar
  • 1 tbsp minced shallots
  • 1 tbsp minced garlic
  • Several sprigs green peppercorns
  • 1 tsp ground black pepper
  • 1 tsp stock powder
  • 2 tbsp soy sauce
  • 90ml water
  • 1 tbsp cooking oil
Method
  1. 1Clean and trim straw mushrooms.
  2. 2Marinate mushrooms with stock powder, soy sauce, and 1 tbsp sugar; mix thoroughly.
  3. 3Heat cooking oil in a non-stick pan. Add 0.5 tbsp sugar and caramelize until amber.
  4. 4Add 1 tbsp minced shallots and 1 tbsp minced garlic to the pan, and fry until golden and fragrant.
  5. 5Transfer the marinated mushrooms to a clay pot.
  6. 6Distribute several sprigs of whole green peppercorns among the mushrooms.
  7. 7Pour the hot caramelized shallot and garlic oil from the pan over the mushrooms in the clay pot.
  8. 8Sprinkle with 1 tsp ground black pepper and add 90ml water.
  9. 9Braise until mushrooms are tender and sauce thickens.
