Method
  1. 1Combine bread flour, sugar, salt, eggs, softened butter, warm milk, and yeast in a stand mixer.
  2. 2Knead the dough with a dough hook for 11 minutes until smooth, then briefly hand-knead into a ball.
  3. 3Place the dough ball in a large metal pot, cover, and let rise for 1 hour until doubled or tripled in size.
  4. 4While dough rises, prepare sesame filling by mixing toasted black sesame seeds, 5 tablespoons granulated sugar, and 4 tablespoons softened unsalted butter.
  5. 5Turn out risen dough, deflate, divide into four equal portions, and shape each into a ball.
  6. 6Roll out one dough ball into a rectangle, spread generously with black sesame filling, and roll tightly into a log, sealing the ends.
  7. 7Stretch the filled dough log to make it longer and thinner.
  8. 8Cut the log lengthwise down the middle, stopping short of one end, to create two strands.
  9. 9Braid the two strands together, keeping cut sides up, seal the end, and coil into a round bun.
  10. 10Repeat the shaping process for the remaining dough portions.
  11. 11Place shaped buns on a parchment-lined baking sheet.
  12. 12Prepare egg wash by mixing 1 egg and 1 teaspoon water, then brush over each bun.
  13. 13Sprinkle sliced almonds over the buns.
