Ingredients
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup diced bell pepper
- 2 cups cooked white rice
- 2 eggs
- Small amount of olive oil
Method
- 1In a large skillet over medium-high heat, add a small amount of olive oil and then the ground beef.
- 2Season the ground beef with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- 3Stir well to evenly coat and break up the ground beef with a spatula until browned and cooked through, about 5-6 minutes.
- 4Add the diced bell pepper and cooked white rice to the skillet and cook for 3-5 minutes until heated through and slightly toasted in spots.
- 5Push the mixture to the sides of the skillet to create an empty space in the middle.
- 6Crack the eggs into the empty space and scramble them until just set.
- 7Mix the scrambled eggs into the rice and meat mixture until well combined.
- 8Serve immediately as is or with hot sauce.
