Ingredients
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup diced bell pepper
  • 2 cups cooked white rice
  • 2 eggs
  • Small amount of olive oil
Method
  1. 1In a large skillet over medium-high heat, add a small amount of olive oil and then the ground beef.
  2. 2Season the ground beef with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. 3Stir well to evenly coat and break up the ground beef with a spatula until browned and cooked through, about 5-6 minutes.
  4. 4Add the diced bell pepper and cooked white rice to the skillet and cook for 3-5 minutes until heated through and slightly toasted in spots.
  5. 5Push the mixture to the sides of the skillet to create an empty space in the middle.
  6. 6Crack the eggs into the empty space and scramble them until just set.
  7. 7Mix the scrambled eggs into the rice and meat mixture until well combined.
  8. 8Serve immediately as is or with hot sauce.
