Ingredients
  • 39 grams chopped cabbage
  • 40 grams grated carrot
  • 40 grams chopped capsicum
  • 50 grams grated paneer
  • 5 grams chopped green chilli or to taste
  • 3 spring onions
  • 1 tsp pink himalayan salt or to taste
  • ½ tsp ground black pepper
  • Chilli powder as per taste
  • ½ tsp chilli flakes
  • 2 tsp chilli oil
  • 2 rice paper sheets
  • 2-3 tbsp sesame oil
  • Water
Method
  1. 1Combine chopped cabbage, grated carrot, and chopped green capsicum in a clear glass bowl.
  2. 2Add 1 tsp pink Himalayan salt, ½ tsp ground black pepper, and ½ tsp chili flakes to the vegetables and mix.
  3. 3Grate 50 grams paneer directly into the bowl with the seasoned vegetables.
  4. 4Add 5 grams finely chopped green chilies and 2 tsp chili oil to the mixture, and thoroughly combine all ingredients by hand.
  5. 5Form small, round balls (roughly 3-4 cm in diameter) from the well-mixed vegetable and paneer filling.
  6. 6Heat a black cast iron tawa on a gas stove and pour 2-3 tbsp sesame oil onto it, spreading evenly with a spoon.
  7. 7Carefully place the formed vegetable-paneer balls onto the oiled tawa, leaving adequate space between them.
  8. 8Soften 2 rice paper sheets by soaking them in water on a separate metal tray, then cut each softened sheet into four smaller, roughly square pieces.
  9. 9Using tongs, pick up a partially cooked ball from the tawa and wrap it in a softened piece of rice paper directly on the tawa, repeating for several dumplings.
  10. 10Sprinkle water onto the tawa around the wrapped dumplings, then place a glass lid over the tawa and steam for approximately two minutes.
  11. 11Finely chop the green leafy parts of the spring onions for garnish while the dumplings steam.
  12. 12After steaming, remove the lid, drizzle more chili oil over each dumpling, and sprinkle with the freshly chopped green spring onions.
  13. 13Briefly replace the lid, then remove the cooked, wrapped dumplings from the tawa using tongs and serve hot in a small glass bowl.
