- 2 salmon fillets
- 2 tbsp Cajun seasoning
- 2 tbsp unsalted butter
- 1 head Romaine lettuce

- 1/4 cup fresh basil leaves

Method
- 1Cut salmon fillets into 1-inch thick strips, season generously with Cajun seasoning, top with pats of butter, and cook (bake or pan-sear) until reddish-brown and crispy.
- 2Cube ciabatta bread, mix with whole garlic cloves and pats of butter, then roast on a baking sheet until golden brown and crisp.
- 3After roasting, add toasted sesame seeds to the bread and garlic mixture, then blend in a food processor until crumbly to create homemade breadcrumbs.
- 4Prepare the Tahini Dressing by combining olive oil, lemon juice, Worcestershire sauce, tahini, water, grated Parmesan cheese, and toasted sesame seeds; blend until smooth.
- 5Toss the chopped Romaine lettuce with the prepared tahini dressing in a large bowl.
- 6Top the dressed greens with the cooked blackened salmon, homemade breadcrumbs, sliced avocado, fresh basil leaves, extra grated Parmesan cheese, and a sprinkle of sea salt.
