Ingredients
  • 100g black sesame seeds
  • 30g white sesame seeds
  • 440ml water
  • 1/2 tsp salt
  • 80g rock sugar
  • 50g glutinous rice flour
  • 100ml coconut milk
  • Shredded coconut for garnish
Method
  1. 1Dry-roast 100g black sesame seeds and 30g white sesame seeds in a pan for 5 minutes, stirring constantly.
  2. 2Transfer roasted seeds to a blender with 400ml water and blend until a smooth, dark grey liquid forms.
  3. 3Strain the blended liquid through a fine-mesh strainer into a bowl, pressing out all liquid and separating the pulp.
  4. 4Stir 1/2 tsp salt and 80g rock sugar into the strained sesame liquid.
  5. 5In a separate small bowl, mix 50g glutinous rice flour with 40ml water to create a smooth slurry.
  6. 6Heat the strained sesame liquid in a saucepan until simmering.
  7. 7Gradually pour the glutinous rice flour slurry into the hot liquid while continuously stirring with chopsticks.
  8. 8Add 100ml coconut milk to the thickening pudding and stir until it reaches a desired thick and glossy consistency.
  9. 9Serve warm, garnished with shredded coconut.
