Ingredients
- A portion of puffed rice
- A portion of flattened rice
- A portion of roasted chickpeas
- A handful of roasted peanuts
- A pinch of chopped green chilies
- A pinch of fresh cilantro
- A small amount of liquid condiment (chutney)
Method
- 1Weigh a portion of puffed rice using a hanging scale.
- 2Transfer the weighed puffed rice into a large kadai filled with hot black sand or fine pebbles.
- 3Continuously stir and sift the puffed rice in the hot sand using a perforated metal scoop until roasted.
- 4Separate the roasted puffed rice from the sand and pour it onto a flat metal plate.
- 5Weigh a portion of flattened rice on the same scale.
- 6Add the flattened rice to the hot sand in the kadai and roast it using the same stirring and sifting technique.
- 7Separate the roasted flattened rice from the sand and add it to the puffed rice on the metal plate.
- 8Transfer the roasted puffed rice and flattened rice into a pink bucket containing other roasted ingredients, including roasted chickpeas.
- 9For a customer, take a small amount of the mixed roasted ingredients from the pink bucket into a transparent plastic bag.
- 10Add a handful of roasted peanuts to the bag.
- 11Add a pinch of chopped green chilies and fresh cilantro to the bag.
- 12Pour a small amount of reddish-brown liquid condiment (chutney) from a pink bucket into the bag.
- 13Shake the bag gently to mix the contents.
- 14Tie the bag and hand it to the customer for serving.
