Ingredients
  • 70 grams besan
  • Salt to taste
  • 1 big onion, finely chopped
  • 2 green chillies, finely chopped
  • 1/2 tsp garam masala
  • 1/4 tsp ajwain
  • 1/4 tsp jeera powder
  • 1/2 tsp chilli powder
  • 1/4 tsp chopped coriander
  • Water as needed
  • Sesame oil or ghee for cooking
  • Cheese, grated
Method
  1. 1Finely chop the onion and green chillies.
  2. 2In a bowl, combine besan, salt, finely chopped onions, green chillies, garam masala, and jeera powder.
  3. 3Crush ajwain between your palms to release aroma, then add it to the bowl along with red chilli powder.
  4. 4Mix all dry ingredients and chopped vegetables thoroughly.
  5. 5Gradually add water while mixing, first with a whisk then by hand, until a smooth, pourable, dosa-like batter consistency is achieved.
  6. 6Stir in the finely chopped fresh coriander into the batter.
  7. 7Rest the batter for 10 minutes.
  8. 8Heat a flat griddle (tawa) on a gas stove over medium flame, then wipe its surface.
  9. 9Pour a ladleful of batter onto the hot tawa and spread it evenly into a thick, round pancake.
  10. 10Grate cheese directly over the top of the cooking puda.
  11. 11Pour sesame oil around the edges of the puda to prevent sticking and aid cooking.
  12. 12Cook the puda on medium flame, flipping as needed, until both sides are golden brown and crispy, and the cheese has melted.
  13. 13Serve hot, optionally with chutney or curd.
