  • 1 cup besan
  • 1 spoonful salt
  • 1 cup water
  • Pinch haldi
  • Finely chopped red onion
  • Diced red tomatoes
  • Diced green bell peppers
  • Grated carrot
  • Crumbled tofu or paneer
  • Chopped green chili
  • Ajwain
  • Chaat masala
  • Red chili powder
  • Sauf
  • Garam masala
Method
  1. 1Combine 1 cup besan with salt and approximately 1 cup water gradually in a mixing bowl.
  2. 2Whisk thoroughly until a smooth, lump-free batter is formed.
  3. 3Add chopped onions, tomatoes, bell peppers, grated carrot, crumbled tofu or paneer, and green chilies to the batter.
  4. 4Spoon in ajwain, chaat masala, red chili powder, sauf, and garam masala.
  5. 5Mix all ingredients well with a spoon until evenly distributed throughout the batter.
  6. 6Heat a tawa on a stovetop.
  7. 7Pour a ladleful of the prepared batter onto the hot tawa.
  8. 8Gently spread the batter with a ladle or spatula to form a circular, thin pancake.
  9. 9Cook the chilla on one side until golden brown and crispy.
  10. 10Flip the chilla with a spatula and cook the other side until golden brown and cooked through.
  11. 11Remove the cooked chilla to a plate and repeat the process for remaining batter.
  12. 12Serve the chillas warm with green chutney, walnuts, and pumpkin seeds.
