Ingredients
- 1 large orange bell pepper
- Several thin deli-style slices (Tofurky)
- Yellow mustard
- 1/2 teaspoon Everything Bagel Seasoning
- 1/4 to 1/2 avocado, sliced
- 2-3 slices red tomato
- Pinch sea salt
- 1-2 large leaves Romaine lettuce
Method
- 1Slice the orange bell pepper in half lengthwise and remove seeds and white membrane.
- 2Layer folded deli-style slices (Tofurky) into the hollow of each bell pepper half.
- 3Squeeze yellow mustard generously over the deli slices.
- 4Sprinkle Everything Bagel Seasoning over the mustard.
- 5Add sliced avocado on top.
- 6Place tomato slices over the avocado.
- 7Sprinkle with a pinch of sea salt.
- 8Wash and gently squeeze excess water from Romaine lettuce leaves, then place them as the top layer.
- 9Press the two filled bell pepper halves together to form a 'sandwich' and enjoy handheld.
