Ingredients
  • 1 large orange bell pepper
  • Several thin deli-style slices (Tofurky)
  • Yellow mustard
  • 1/2 teaspoon Everything Bagel Seasoning
  • 1/4 to 1/2 avocado, sliced
  • 2-3 slices red tomato
  • Pinch sea salt
  • 1-2 large leaves Romaine lettuce
Method
  1. 1Slice the orange bell pepper in half lengthwise and remove seeds and white membrane.
  2. 2Layer folded deli-style slices (Tofurky) into the hollow of each bell pepper half.
  3. 3Squeeze yellow mustard generously over the deli slices.
  4. 4Sprinkle Everything Bagel Seasoning over the mustard.
  5. 5Add sliced avocado on top.
  6. 6Place tomato slices over the avocado.
  7. 7Sprinkle with a pinch of sea salt.
  8. 8Wash and gently squeeze excess water from Romaine lettuce leaves, then place them as the top layer.
  9. 9Press the two filled bell pepper halves together to form a 'sandwich' and enjoy handheld.
