Ingredients
  • 1 & 1/2 cups atta (whole wheat flour)
  • 1 cup plain flour (all-purpose flour)
  • 1/4 tsp salt
  • 2 tbsp oil (for dough)
  • 1 tsp oil (for coating dough)
  • 1 cup warm water
  • Oil for frying
Method
  1. 1Combine whole wheat flour and all-purpose flour in a large bowl.
  2. 2Add 2 tbsp oil and 1/4 tsp salt; mix thoroughly by hand until the flour has a crumbly texture.
  3. 3Gradually add warm water, little by little, while kneading the dough vigorously for 10-12 minutes until it forms a soft, smooth, non-sticky mass.
  4. 4Coat the dough with about 1 tsp oil to prevent drying, cover with a clean tea towel, and let it rest for 15-30 minutes.
  5. 5After resting, briefly knead the dough again until it feels softer, then divide it into smaller, roughly equal portions and roll them into smooth balls.
  6. 6Lightly dust your work surface and a dough ball with flour, flatten it gently, and roll it out evenly using a rolling pin, turning occasionally.
  7. 7Cook the rolled paratha on a hot griddle with about 1/2 tsp oil for shallow frying until both sides are golden brown.
