Ingredients
- 1 & 1/2 cups atta (whole wheat flour)
- 1 cup plain flour (all-purpose flour)
- 1/4 tsp salt
- 2 tbsp oil (for dough)
- 1 tsp oil (for coating dough)
- 1 cup warm water
- Oil for frying
Method
- 1Combine whole wheat flour and all-purpose flour in a large bowl.
- 2Add 2 tbsp oil and 1/4 tsp salt; mix thoroughly by hand until the flour has a crumbly texture.
- 3Gradually add warm water, little by little, while kneading the dough vigorously for 10-12 minutes until it forms a soft, smooth, non-sticky mass.
- 4Coat the dough with about 1 tsp oil to prevent drying, cover with a clean tea towel, and let it rest for 15-30 minutes.
- 5After resting, briefly knead the dough again until it feels softer, then divide it into smaller, roughly equal portions and roll them into smooth balls.
- 6Lightly dust your work surface and a dough ball with flour, flatten it gently, and roll it out evenly using a rolling pin, turning occasionally.
- 7Cook the rolled paratha on a hot griddle with about 1/2 tsp oil for shallow frying until both sides are golden brown.
