- 400g boneless chicken thigh, cut into bite-sized pieces
- 1 tbsp light soy sauce
- 1/4 tsp baking soda
- 2 tbsp cornflour
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil spray for air frying
- 1 boiled whole egg
- 2 tbsp sriracha
- Chili flakes
- 1 tsp minced garlic or garlic paste
- A splash of soy sauce
- 1 tbsp honey
- 2 slices of processed cheese
- 1 tsp regular vinegar
- 1 tsp regular oil
- Salt to taste
- 2–3 tbsp skim milk, to thin
- 1–2 tsp chili crisp
- Chopped spring onion greens
Method
- 1Marinate bite-sized boneless chicken thigh pieces in light soy sauce and baking soda for 15-20 minutes.
- 2Add cornflour, salt, and black pepper to the chicken and mix thoroughly until evenly coated.
- 3Spread the coated chicken pieces evenly in a greased air fryer basket and spray with oil.
- 4Air-fry the chicken at 200 degrees Celsius for 8 to 9 minutes, shaking halfway, until deeply golden and crispy.
- 5While the chicken cooks, combine a boiled egg, sriracha, chili flakes, minced garlic or garlic paste, a splash of soy sauce, honey, two slices of processed cheese, vinegar, regular oil, and salt to taste in a small blender jar.
- 6Blend the sauce ingredients until a smooth, creamy, and pale orange sauce is formed.
- 7Thin the sauce with skim milk to achieve a silky, pourable consistency.
- 8Place the air-fried crispy chicken in a bowl and generously pour the blended Bang Bang sauce over it.
- 9Toss the chicken gently to ensure every piece is fully coated with the luscious sauce.
- 10Garnish the final dish with chili crisp and chopped spring onion greens just before serving.
