Ingredients
  • 400g boneless chicken thigh, cut into bite-sized pieces
  • 1 tbsp light soy sauce
  • 1/4 tsp baking soda
  • 2 tbsp cornflour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil spray for air frying
  • 1 boiled whole egg
  • 2 tbsp sriracha
  • Chili flakes
  • 1 tsp minced garlic or garlic paste
  • A splash of soy sauce
  • 1 tbsp honey
  • 2 slices of processed cheese
  • 1 tsp regular vinegar
  • 1 tsp regular oil
  • Salt to taste
  • 2–3 tbsp skim milk, to thin
  • 1–2 tsp chili crisp
  • Chopped spring onion greens
Method
  1. 1Marinate bite-sized boneless chicken thigh pieces in light soy sauce and baking soda for 15-20 minutes.
  2. 2Add cornflour, salt, and black pepper to the chicken and mix thoroughly until evenly coated.
  3. 3Spread the coated chicken pieces evenly in a greased air fryer basket and spray with oil.
  4. 4Air-fry the chicken at 200 degrees Celsius for 8 to 9 minutes, shaking halfway, until deeply golden and crispy.
  5. 5While the chicken cooks, combine a boiled egg, sriracha, chili flakes, minced garlic or garlic paste, a splash of soy sauce, honey, two slices of processed cheese, vinegar, regular oil, and salt to taste in a small blender jar.
  6. 6Blend the sauce ingredients until a smooth, creamy, and pale orange sauce is formed.
  7. 7Thin the sauce with skim milk to achieve a silky, pourable consistency.
  8. 8Place the air-fried crispy chicken in a bowl and generously pour the blended Bang Bang sauce over it.
  9. 9Toss the chicken gently to ensure every piece is fully coated with the luscious sauce.
  10. 10Garnish the final dish with chili crisp and chopped spring onion greens just before serving.
