Method
- 1In a metal bowl, add 1 cup of whole wheat flour, 3 tablespoons of vanilla custard powder, 2 tablespoons of milk powder, 1 teaspoon of cardamom powder, a pinch of salt, 3/4 teaspoon of baking powder, and 1/8 teaspoon of baking soda.
- 2Thoroughly whisk all dry ingredients together until well combined.
- 3In a separate metal bowl, add 3/4 cup of powdered sugar, 1/3 cup of ghee, and 2 tablespoons of soft butter.
- 4Vigorously whisk the wet mixture by hand for about 1 to 1.5 minutes until it becomes smooth, creamy, and light in texture.
- 5Pour the whisked dry ingredients into the bowl containing the creamy wet mixture and stir with a whisk.
- 6Switch to using hands to mix the ingredients further, forming a crumbly texture, then add 2 tablespoons of milk.
- 7Knead the mixture by hand to form a soft, smooth, and non-sticky dough.
- 8Place the smooth dough ball on a white cutting board dusted with a little flour and gently press it down to flatten it into a thick, round disc about 0.5 inches (or 2-3 cm) thick.
- 9Using a small round cookie cutter, cut circular cookies from the flattened dough, gathering, re-kneading, and re-flattening any leftover dough scraps to cut more cookies.
- 10Carefully arrange the raw cookies on a baking tray lined with parchment paper, leaving sufficient space between each cookie.
- 11Preheat the oven (OTG/oven) to 180°C.
- 12Reduce the oven temperature to 160°C and bake the cookies for 20 minutes.
- 13Once baked and golden-brown, transfer the cookies to a cooling rack and let them cool completely until they become perfectly crispy and crunchy.
