  • 4 (6-ounce) salmon fillets
  • 1 (8-ounce) block feta cheese
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 teaspoons oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 5 ounces fresh baby spinach
  • 8 ounces penne pasta, cooked al dente
Method
  1. 1Preheat the oven to 400°F.
  2. 2Add the feta, cherry tomatoes, and salmon to a 9x13 baking dish. Drizzle with olive oil, add the oregano, garlic powder, salt, and pepper.
  3. 3Bake for 20-25 minutes, until the salmon is cooked through and flakes easily with a fork and the tomatoes have burst.
  4. 4Remove from the oven and add the spinach directly to the hot dish. Let it sit for 2–3 minutes to wilt.
  5. 5Use a fork to gently flake the salmon and mash the feta and tomatoes together until creamy. Stir everything together to create a sauce.
  6. 6Add the cooked penne and toss until fully coated. If needed, add 2–3 tablespoons reserved pasta water to loosen the sauce.
