- 4 salmon fillets, skinless, cut into 2.5cm / 1″ cubes (~600 – 700g / 1.2 – 1.4lb total)
- 2 tsp paprika (regular/sweet, smoked also lovely)
- 3/4 tsp cooking salt / kosher salt (halve for table salt, +50% for flakes)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper, optional for slight spiciness
- 2 1/2 tsp brown sugar, tightly pack the spoon measure
- 1 1/2 tbsp olive oil
Method
- 1Scrunch a sheet of aluminum foil lightly, unfold without flattening the crinkles, and place on a baking tray, securing the edges.
- 2Cut salmon fillets into uniform, approximately 1-inch cubes.
- 3In a bowl, mix paprika, salt, onion powder, garlic powder, dried thyme, black pepper, cayenne pepper, brown sugar, and olive oil to create a marinade paste.
- 4Add the diced salmon to the bowl with the marinade and gently toss until all salmon cubes are thoroughly coated.
- 5Pour the marinated salmon bites onto the prepared crumpled foil on the baking sheet and spread them out evenly using tongs.
- 6Bake the salmon bites in a hot oven until nicely caramelized on the outside and perfectly cooked on the inside.
- 7Serve the Baked Cajun Salmon Bites as a bowl meal with white rice, a corn salad (containing yellow corn, diced red bell pepper, diced avocado, and chopped green herbs), and drizzled with a creamy Perinaise sauce, garnished with fresh chopped herbs.
