  • 4 salmon fillets, skinless, cut into 2.5cm / 1″ cubes (~600 – 700g / 1.2 – 1.4lb total)
  • 2 tsp paprika (regular/sweet, smoked also lovely)
  • 3/4 tsp cooking salt / kosher salt (halve for table salt, +50% for flakes)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper, optional for slight spiciness
  • 2 1/2 tsp brown sugar, tightly pack the spoon measure
  • 1 1/2 tbsp olive oil
Method
  1. 1Scrunch a sheet of aluminum foil lightly, unfold without flattening the crinkles, and place on a baking tray, securing the edges.
  2. 2Cut salmon fillets into uniform, approximately 1-inch cubes.
  3. 3In a bowl, mix paprika, salt, onion powder, garlic powder, dried thyme, black pepper, cayenne pepper, brown sugar, and olive oil to create a marinade paste.
  4. 4Add the diced salmon to the bowl with the marinade and gently toss until all salmon cubes are thoroughly coated.
  5. 5Pour the marinated salmon bites onto the prepared crumpled foil on the baking sheet and spread them out evenly using tongs.
  6. 6Bake the salmon bites in a hot oven until nicely caramelized on the outside and perfectly cooked on the inside.
  7. 7Serve the Baked Cajun Salmon Bites as a bowl meal with white rice, a corn salad (containing yellow corn, diced red bell pepper, diced avocado, and chopped green herbs), and drizzled with a creamy Perinaise sauce, garnished with fresh chopped herbs.
