- 0.5 teaspoon Cumin powder (Jeera powder)
- 0.5 teaspoon Garam Masala
Method
- 1Preheat oven to 400°F (204°C).
- 2Wash and thoroughly dry the okra, then chop into pieces less than an inch long. Trim tops and ends.
- 3Place chopped okra in a large bowl, add 2 tablespoons of oil and mix thoroughly to coat.
- 4Add salt, Amchur powder, turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala to the okra; mix until evenly seasoned.

- 6Bake in the preheated oven for 10 minutes.
- 7Remove the baking sheet, add sliced red onions to the residual spices in the mixing bowl, add 0.5 tablespoon oil and a pinch of salt, and mix quickly.
- 8Spread the seasoned onions over the partially cooked okra on the baking sheet and gently toss.
- 9Return to the oven for an additional 10-15 minutes, or until cooked to desired doneness.
