Ingredients
  • 1 pound fresh okra
  • 1 medium red onion, sliced
  • 2.5 tablespoons oil (approx. 2 tbsp for okra, 0.5 tbsp for onions)
  • Salt to taste
  • 1 teaspoon Amchur (dry mango powder)
  • 0.5 teaspoon Haldi (turmeric powder)
  • 0.5 teaspoon red chili powder
  • 1 teaspoon Dhaniya powder (coriander powder)
  • 0.5 teaspoon Cumin powder (Jeera powder)
  • 0.5 teaspoon Garam Masala
Method
  1. 1Preheat oven to 400°F (204°C).
  2. 2Wash and thoroughly dry the okra, then chop into pieces less than an inch long. Trim tops and ends.
  3. 3Place chopped okra in a large bowl, add 2 tablespoons of oil and mix thoroughly to coat.
  4. 4Add salt, Amchur powder, turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala to the okra; mix until evenly seasoned.
  5. 5Line a baking sheet with parchment paper and spread the seasoned okra in a single layer.
  6. 6Bake in the preheated oven for 10 minutes.
  7. 7Remove the baking sheet, add sliced red onions to the residual spices in the mixing bowl, add 0.5 tablespoon oil and a pinch of salt, and mix quickly.
  8. 8Spread the seasoned onions over the partially cooked okra on the baking sheet and gently toss.
  9. 9Return to the oven for an additional 10-15 minutes, or until cooked to desired doneness.
