Ingredients
- Large, ripe avocado (approximately 1.5-2 cups of mashed flesh)
- 1/4 to 1/2 cup of freshly chopped cilantro
- 1 teaspoon of a brown spice mix
- 1/2 teaspoon of salt
- 1 teaspoon of ground cumin
- 1/2 teaspoon of turmeric powder
- 1/2 cup of grated paneer
- Breadcrumbs made from one slice of whole wheat bread (about 1/2 cup)
- Small amount of olive oil
- 1/2 cup of chopped tomatoes
- 1/4 cup of chopped red onions
- Approximately 1 tablespoon of pizza sauce
- White sauce
Method
- 1Cut a large, ripe avocado in half, remove the pit, and scoop the green flesh into a mixing bowl.
- 2Add chopped cilantro, the Indian spice mix, salt, ground cumin, and turmeric powder to the mashed avocado.
- 3Grate fresh paneer directly into the bowl.
- 4Dice a slice of whole wheat bread, blend into breadcrumbs, and add to the mixture.
- 5Thoroughly mix all ingredients in the bowl with a wooden spoon until a uniform, dough-like consistency is achieved.
- 6Roll small portions of the mixture into balls and flatten them into round patties.
- 7In a separate bowl, combine chopped tomatoes, chopped red onions, and pizza sauce, then stir to make a quick salsa.
- 8Lightly grease a non-stick pan with olive oil using a spatula.
- 9Place the avocado patties on the hot pan and cook on both sides until they turn golden brown and slightly crispy.
- 10Serve the cooked avocado kebabs hot on a dark plate.
- 11Generously top each kebab with a spoonful of the fresh tomato and onion salsa.
- 12Finish with a swirl of white sauce piped from a bag.
