Ingredients
- 1 head broccoli
- 1 small red onion
- 2 bok choy bulbs
- 1-2 jalapenos
- 1/2 cup roasted peanuts
- 1-2 bell peppers
- 8 oz baby bella mushrooms
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp water or broth
- 1 tbsp hot sauce
- 1 tsp cornstarch
- 2 tbsp oil
- Black pepper to taste
- Salt to taste
- Drizzle of sesame oil
- Sprinkle of sesame seeds
Method
- 1Heat 2 tablespoons of oil in a wok or large pan over high heat.
- 2Add minced ginger and garlic, cooking for 30 seconds until fragrant.
- 3Add chopped red onion and stir-fry for 30 seconds.
- 4Add quartered baby bella mushrooms and cook for 1 minute until softened.
- 5Stir in sliced jalapenos, peanuts, diced bell peppers, blanched broccoli florets, and cut Bok Choy.
- 6Season with black pepper and a small amount of salt, then stir-fry until vegetables are crisp-tender and Bok Choy wilts.
- 7Re-mix the prepared sauce (soy sauce, vinegar, water/broth, hot sauce, cornstarch) thoroughly.
- 8Pour the sauce over the vegetables and cook for 1 more minute until the sauce thickens and coats the vegetables.
- 9Turn off the heat, drizzle with sesame oil, and garnish with sesame seeds.
