Ingredients
- ¾ cup warm milk
- 14g instant dry yeast
- ¾ cup brown sugar
- 3 cups all-purpose flour
- 1 tsp ground cardamom
- 1 tsp ground cinnamon
- 1 tsp kosher salt
- 3 large egg yolks
- 2 medium apples
- 2 tbsp unsalted butter
- 2 tbsp granulated sugar
- 1 tbsp apple cider vinegar
- 4 cups peanut oil
- 1 ½ cups confectioner’s sugar
- 2 tbsp fresh lemon juice
- 2 tbsp maple syrup
- Flaky salt
Method
- 1Warm milk to 110-115°F and combine with yeast and a portion of brown sugar; let sit for 10 minutes.
- 2In a separate bowl, whisk together all-purpose flour, remaining brown sugar, cinnamon, cardamom, and kosher salt.
- 3Add egg yolks and dry ingredients to the activated yeast mixture in a stand mixer; knead with a dough hook for 6 minutes.
- 4Transfer dough to a greased container and proof in a warm spot for 90 minutes.
- 5Peel, core, and dice apples. Sauté diced apples with butter, granulated sugar, salt, and apple cider vinegar until tender, then cool.
- 6Gently deflate the proofed dough and fold in the cooled cooked apples.
- 7Heat peanut oil in a Dutch oven to 350-375°F.
- 8Drop spoonfuls of apple dough into the hot oil and deep-fry until golden brown, flipping as needed.
- 9Remove fried fritters and drain on a wire rack.
- 10Whisk together confectioner's sugar, lemon juice, and maple syrup to create a glaze.
- 11Dip warm fritters into the glaze and sprinkle with flaky salt before serving.
