Ingredients
  • ¾ cup warm milk
  • 14g instant dry yeast
  • ¾ cup brown sugar
  • 3 cups all-purpose flour
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 1 tsp kosher salt
  • 3 large egg yolks
  • 2 medium apples
  • 2 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • 1 tbsp apple cider vinegar
  • 4 cups peanut oil
  • 1 ½ cups confectioner’s sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp maple syrup
  • Flaky salt
Method
  1. 1Warm milk to 110-115°F and combine with yeast and a portion of brown sugar; let sit for 10 minutes.
  2. 2In a separate bowl, whisk together all-purpose flour, remaining brown sugar, cinnamon, cardamom, and kosher salt.
  3. 3Add egg yolks and dry ingredients to the activated yeast mixture in a stand mixer; knead with a dough hook for 6 minutes.
  4. 4Transfer dough to a greased container and proof in a warm spot for 90 minutes.
  5. 5Peel, core, and dice apples. Sauté diced apples with butter, granulated sugar, salt, and apple cider vinegar until tender, then cool.
  6. 6Gently deflate the proofed dough and fold in the cooled cooked apples.
  7. 7Heat peanut oil in a Dutch oven to 350-375°F.
  8. 8Drop spoonfuls of apple dough into the hot oil and deep-fry until golden brown, flipping as needed.
  9. 9Remove fried fritters and drain on a wire rack.
  10. 10Whisk together confectioner's sugar, lemon juice, and maple syrup to create a glaze.
  11. 11Dip warm fritters into the glaze and sprinkle with flaky salt before serving.
