Ingredients
  • 500 grams chicken
  • 2 medium onions, sliced (about 2 cups chopped)
  • 1 bay leaf
  • 5 dried red chilies (thai chillies)
  • 3-4 whole green chilies (a mix of green and red variety)
  • A handful of fresh curry leaves (3 stems)
  • 1 tsp Kashmiri chili powder
  • ¼ tsp ginger garlic paste
  • Salt to taste
  • ½ tsp turmeric powder
  • A handful of raw cashew nuts
  • Cooking oil (a good amount)
  • A squeeze of fresh lemon juice
  • ½ tsp jeera
  • ½ tsp pepper
  • 1 tsp sabudhaniya
  • 5 cloves
  • ¼ tsp mace
  • 1 tsp poppy seeds
  • 1 star anise
  • Cardamom (1 black cardamom, 2 pods for grinding)
  • Cinnamon (1 small 2-inch stick for tempering, plus more for grinding)
  • Nutmeg (¼ tsp, small piece)
Method
  1. 1Grind jeera, pepper, sabudhaniya, cardamom pods, cloves, nutmeg, mace, poppy seeds, star anise, and additional cinnamon sticks into a coarse, aromatic powder.
  2. 2Heat a good amount of cooking oil in a stainless steel kadai.
  3. 3Add bay leaf, 1 small 2-inch cinnamon stick, 1 black cardamom, and dried red chilies to temper the oil, then add chopped red onions and one large whole green chili, and sauté until onions are softened and translucent.
  4. 4Add the marinated chicken pieces to the sautéed onions and spices, then stir well to combine.
  5. 5Sprinkle 1 tsp Kashmiri chili powder over the chicken and mix in thoroughly.
  6. 6Cover the kadai with a lid and cook for about 10 minutes to allow the chicken to steam and cook in its own juices.
  7. 7Remove the lid, then add fresh curry leaves, the remaining whole green and red chilies, and raw cashew nuts, stirring into the simmering chicken.
  8. 8Continue to cook uncovered until the chicken starts to fry.
  9. 9Generously sprinkle the freshly ground Andhra masala over the chicken and mix well.
  10. 10Cover the kadai again for a short period to allow the flavors of the fresh masala to meld with the chicken.
  11. 11Uncover and continue to cook until the dish is dry.
  12. 12Squeeze a small amount of fresh lemon juice over the chicken fry and give it one last mix, then switch off the heat.
