Ingredients
  • 3 medium size potatoes, boiled and peeled
  • 1 cup finely chopped tomatoes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/8 teaspoon asafoetida
  • 2 teaspoons coriander powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric
  • 1 teaspoon finely grated ginger
  • 1 teaspoon salt
  • 2 cups water
  • 1/4 teaspoon garam masala
  • 2 tablespoons finely chopped cilantro
  • 1 green chili, seeded and cut into small pieces (optional)
Method
  1. 1Break boiled and peeled potatoes into bite-sized pieces.
  2. 2Heat oil in a pan (or dutch oven).
  3. 3Add cumin seeds and asafoetida to hot oil and temper until fragrant.
  4. 4Add chopped tomatoes and cook for approximately 2 minutes until soft and mushy.
  5. 5Stir in coriander powder, turmeric, grated ginger, and red chili powder; cook for another minute until oil separates from spices.
  6. 6Add the broken potatoes and mix thoroughly to coat them with the spice-tomato paste.
  7. 7Pour in water and bring the mixture to a boil.
  8. 8Simmer over low-medium heat for approximately 10 minutes.
  9. 9Stir in fresh chopped cilantro and garam masala.
  10. 10Cover the pan briefly before serving.
