Ingredients
  • 1½ cups rolled oats
  • ½ cup pecans, roughly chopped
  • ¼ cup walnuts, roughly chopped
  • ¼ cup pumpkin seeds
  • ½ teaspoon cardamom
  • ½ teaspoon cinnamon
  • ¼ cup honey
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • ¼ cup chopped dates
Method
  1. 1Line the basket of an air fryer with parchment paper.
  2. 2Add the oats, pecans, walnuts, pumpkin seeds, cardamom, cinnamon, honey, melted butter, and vanilla to the lined basket.
  3. 3Air fry at 320°F for 5 minutes.
  4. 4Remove from air fryer and use a spoon to stir everything together.
  5. 5Continue to air fry for 10 more minutes, until the granola is golden and fragrant.
  6. 6Remove from the air fryer and immediately stir in the chopped dates while still on the parchment paper.
  7. 7Let the granola cool completely on the parchment paper on a wire rack until it crisps up and clusters form.
  8. 8Store the cooled granola in a large, clear glass jar for storage.
