Ingredients
- 1½ cups rolled oats
- ½ cup pecans, roughly chopped
- ¼ cup walnuts, roughly chopped
- ¼ cup pumpkin seeds
- ½ teaspoon cardamom
- ½ teaspoon cinnamon
- ¼ cup honey
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- ¼ cup chopped dates
Method
- 1Line the basket of an air fryer with parchment paper.
- 2Add the oats, pecans, walnuts, pumpkin seeds, cardamom, cinnamon, honey, melted butter, and vanilla to the lined basket.
- 3Air fry at 320°F for 5 minutes.
- 4Remove from air fryer and use a spoon to stir everything together.
- 5Continue to air fry for 10 more minutes, until the granola is golden and fragrant.
- 6Remove from the air fryer and immediately stir in the chopped dates while still on the parchment paper.
- 7Let the granola cool completely on the parchment paper on a wire rack until it crisps up and clusters form.
- 8Store the cooled granola in a large, clear glass jar for storage.
