Ingredients
  • 2-3 large spoonfuls Nam Prik Pao
  • 2-3 cloves minced garlic
  • 1-2 small chopped shallots
  • 2-3 cups cooked white rice
  • 1 tbsp chili flakes
  • 2-3 eggs
  • 1/2 cup diced bell peppers
  • 8-10 medium shrimp
  • Generous handful Thai basil leaves
  • 2 tbsp cooking oil
Method
  1. 1Heat cooking oil in a wok.
  2. 2Sauté minced garlic and chopped shallots until fragrant.
  3. 3Add cooked white rice to the wok.
  4. 4Add Nam Prik Pao and chili flakes, then vigorously stir-fry to combine.
  5. 5Add scrambled eggs, diced bell peppers, and shrimp to the wok.
  6. 6Continue stir-frying until ingredients are heated through and well combined.
