  • Approximately 1.5 to 2 cups of brown/green lentils

  • About 1/2 of a small red onion, finely chopped
  • 1 medium potato, peeled and cubed into small pieces
  • 1 medium tomato, chopped
  • Approximately 1 tablespoon of tomato paste
  • About 1/2 cup of green peas
  • Approximately 2-3 cups of stock
  • Salt, to taste
  • Black pepper, to taste
  • A handful of fresh spinach, chopped
  • Grated cheese (about 1 tablespoon)
  • Fresh cilantro or chives, finely chopped
Method
  1. 1Set the Instant Pot to "Sauté" mode.
  2. 2Pour olive oil into the inner pot, then add bay leaves, minced garlic, and dried thyme, and stir for a short while.
  3. 3Add chopped red onions and sauté until softened.
  4. 4Add cubed potatoes and chopped tomatoes to the pot.
  5. 5Stir in approximately 1 tablespoon of tomato paste.
  6. 6Add the previously rinsed and soaked lentils, followed by the green peas.
  7. 7Pour vegetable stock over the ingredients, add salt and black pepper, and thoroughly stir the mixture.
  8. 8Secure the lid of the Instant Pot and set the timer for 10 minutes of pressure cooking.
  9. 9Carefully open the Instant Pot after 10 minutes.
  10. 10Add chopped fresh spinach to the hot stew and stir until it wilts and combines.
  11. 11Ladle the cooked stew into white bowls and garnish generously with grated white cheese and a sprinkle of fresh green herbs.
