Ingredients
- Approximately 1.5 to 2 cups of brown/green lentils
- About 1 tablespoon of olive oil
- 1-2 bay leaves
- Roughly 4-5 cloves of garlic, minced
- Approximately 1/2 teaspoon of dried thyme
- About 1/2 of a small red onion, finely chopped
- 1 medium potato, peeled and cubed into small pieces
- 1 medium tomato, chopped
- Approximately 1 tablespoon of tomato paste
- About 1/2 cup of green peas
- Approximately 2-3 cups of stock
- Salt, to taste
- Black pepper, to taste
- A handful of fresh spinach, chopped
- Grated cheese (about 1 tablespoon)
- Fresh cilantro or chives, finely chopped
Method
- 1Set the Instant Pot to "Sauté" mode.
- 2Pour olive oil into the inner pot, then add bay leaves, minced garlic, and dried thyme, and stir for a short while.
- 3Add chopped red onions and sauté until softened.
- 4Add cubed potatoes and chopped tomatoes to the pot.
- 5Stir in approximately 1 tablespoon of tomato paste.
- 6Add the previously rinsed and soaked lentils, followed by the green peas.
- 7Pour vegetable stock over the ingredients, add salt and black pepper, and thoroughly stir the mixture.
- 8Secure the lid of the Instant Pot and set the timer for 10 minutes of pressure cooking.
- 9Carefully open the Instant Pot after 10 minutes.
- 10Add chopped fresh spinach to the hot stew and stir until it wilts and combines.
- 11Ladle the cooked stew into white bowls and garnish generously with grated white cheese and a sprinkle of fresh green herbs.
